{"id":1635,"date":"2017-02-24T07:01:23","date_gmt":"2017-02-24T07:01:23","guid":{"rendered":"https:\/\/burnitnutrition.com\/?p=1635"},"modified":"2017-02-24T07:01:23","modified_gmt":"2017-02-24T07:01:23","slug":"chorizoeggs","status":"publish","type":"post","link":"https:\/\/burnitnutrition.com\/chorizoeggs\/","title":{"rendered":"Spanish Classic Chorizo & Eggs"},"content":{"rendered":"<p>Today we will learn how to make a dish my grandmother used to make me when I was a young boy.<br \/>\nWe are making a classic Spanish breakfast called Chorizo and Eggs, this is a\u00a0mouth-watering way to serve up those eggs.<\/p>\n<p>Now my grandmother served them up with tortillas but we are tossing those and replacing it with a side of yummy sauteed veggies and lettuce wraps.<\/p>\n<p><strong class=\"jn-boldstyle-post\">Ingredients \u00a0<\/strong><strong class=\"jn-boldstyle-post\">\u00a0 (Serves 2)<\/strong><\/p>\n<p><em><strong class=\"jn-boldstyle-post\">Chorizo and Eggs\u00a0<\/strong><\/em><\/p>\n<ul>\n<li>6 eggs<\/li>\n<li>\u00bc pound Mexican chorizo sausage<\/li>\n<li>1 tbsp. butter<\/li>\n<li>1 green onion<\/li>\n<li>1 tomato<\/li>\n<li>1 bell pepper, any color<\/li>\n<li>4 tbsp. queso fresco<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong class=\"jn-boldstyle-post\">Directions<\/strong><\/p>\n<ul>\n<li>Crack a few eggs into a bowl and whisk, then chop the veggies, the tomato,\u00a0bell pepper, and green onion.<\/li>\n<li>Next Place a large skillet over medium-high heat and once it’s hot, add the butter. Then add in the chopped veggies and salt and pepper to taste. Saut\u00e9 for around 8-10 minutes, or until tender, then set aside in a covered dish.<\/li>\n<li>Next, remove the chorizo from the casing, (chorizo is a like a spicy savory sausage), squeeze\u00a0it out of the casing and add it to the skillet. Cook for around 3-4 minutes, make sure to move it around to avoid burning. Once it has browned, add the whisked eggs and mix in. Let it all cook together for another 3-4 minutes.<\/li>\n<li>Finally, serve the veggies and the chorizo and eggs plus crumble some queso fresco on top.<\/li>\n<li>You can also add low-carb salsa or hot sauce if you want a bit of extra kick to it.<\/li>\n<\/ul>\n<div align=\"center\">\n<div><span style=\"color: #010101; font-family: 'Times New Roman'; font-size: large;\"><i>You can have this delicious dish with your morning coffee or even for dinner you can also use a lettuce wrap as a substitute for tortillas.<\/i><\/span><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Today we will learn how to make a dish my grandmother used to make me when I was a young boy.
